l/2 lb. bacon, cooked, crumbled
2 tbsps. bacon fat
2 onions chopped
l clove garlic, minced
3 lbs. potatoes, peeled, cut into l” cubes
l cup chicken stock
l tbsps. fresh tarragon or l/2 tbsps. dried
l dash pepper
2 tbsps. white wine vinegar
Parsley
l tbsps. olive oil
Cook onions and garlic in bacon fat. Add potatoes, stock, tarragon
and pepper. Cover, simmer l5 mins. or until potatoes are tender but
not mushy, and liquid is absorbed. Add vinegar and oil. Toss lightly
Sprinkle with parsley, serve hot.
