l-l/2 lbs. boneless chicken breasts cut into l” cubes – quickly sautéed
l tbls. toasted sesame oil
3/4 cup roasted cashews
1 tbsp. minced fresh ginger
1/3 cup soy sauce
l tbsp. garlic chili sauce
1 cup sliced scallions
Cook chicken just to stiffen. Heat oil in skillet over med-high – add cashews stir fry 1 min. Add ginger and fry 30 secs. Stir in soy sauce & garlic sauce then add cooked chicken – stir fry 2 mins more. Stir in scallions.
