CARROT CAKE

2 cups unsifted all purpose flour
2-l/2 tsp. baking soda
2 tsp. cinnamon
l tsp. salt
l cup oil
2 cups sugar
3 eggs
l 8 oz. can crushed pineapple in juice
2 cups grated carrots
l cup flaked coconut
l cup chopped nuts
Mix flour, baking soda, cinnamon, salt. Beat oil, sugar & eggs
thoroughly. Add flour mixture. Beat until smooth. Add pineapple,
carros, coconut & nuts. Pour into greased l3x9″ pan. Bake at 350 for
50-60 mins. Remove from pan. Cool on rack.
Coconut Cream Frosting: Cream l 3-0z. pkg. cream cheese with l/4 cup
butter. Alternately add 3 cups sifted confec. sugar, l tbsps. milk
& l/2 tsp. vanilla. Beat until smooth. Frost cake.You can also use orange ceam cheese frosting
