Serve a wheel of Camembert this way next time you want to make an
impression on cocktail guests.
l/4 cup butter, softened
l/4 cup ground pecans
Hot pepper sauce
2 tbsps. lemon juice
l 8-oz. wheel Camembert or Brie, chilled
Cream softened butter until light and fluffy. Blend in pecans, a few
drops of hot pepper sauce and lemon juice. Cut Camembert in halves
horizontally while still firm. Spread bottom layer with butter
mixture. Replace top of cheese. Wrap in plastic wrap and chill until
filling is firm. Slice in thin wedges and let stand at room tempera-
ture l/2 hour before serving. Serve on toast points.
Makes about 8 servings.
