butternut squash and sage orzo
3 tbsps. butter
l cup chopped onion
l garlic clove, minced
l 2 lb. butternut squash, peeled. seeded, cut into l/2″ pieces (about 4 cups)
4 cups chicken broth
l/2 cup dry white wine
l cup orzo
l/2 cup grated Parmesan
2 tbsps. chopped fresh sage
Melt butter in heavy large skillet over med. heat. Add onion and saute until tender, about 6 mins. Add garlic
and saute until fragrant, about l min. Add squash and stir to coat. Add l/2 cup chicken broth and wine. Simmer
until squash is almost tender and liquid is absorbed, about l0 mins. Meanwhile, bring 3-l/2 cups broth to boil
in heavy large saucepan. Add orzo. Boil until tender but still firm to bite about 8 mins. Drain orzo if necessary. Transfer orzo to large bowl. Stir in butternut squash mixture, then Parmesan and sage. Season with s&p.
