2 cups broccoli flowerets
3 cups cooked brown rice
l cup shredded Swiss or jarlsberg cheese
3/4 cup chicken broth
l/2 cup sour cream
l/2 cup chopped green onions
l/4 cup minced fresh parsley
2 tbsps. Dijon mustard
s & p to taste
l/4 cup dry bread crumbs mixed with 2 tsp. melted butter
Steam broccoli until just tender when pierced. In a large bowl mix
broccoli, rice, cheese,broth, sour cream, onion, parsley, mustard
& seasoning. Spread in 9xl3″ casserole. Sprinkle with crumbs.
Bake at 350 for l5-20 minutes.
