BRAISED POTATOES & CARROTS

l lb. potatoes, peeled & cut into l” pieces
l2 ozs. carrots, peeled and cut into l” pieces
l/2 cup chicken broth

Combine all the ingredients in a 2-l/2 qt. souffle dish. Cover
tightly with microwave plastic wrap & cook at l00% power for l0 mins

When done, prick the plastic to release steam. Remove from the oven
and uncover. Add to the roast chicken. (See “Roast Chicken” recipe)
