BOURSIN MASHED POTATOES

3-l/2 lbs. potatoes, peeled and cut into 2″ chunks (about l0 med potatoes)
2 5.2 oz. pkgs boursin cheese with garlic and herbs
l/2 cup whole milk, half and half or light cream
salt & pepper
Cover potatoes with boiling water. Cook covered for 20-25 mins. or till tender; drain; return potatoes to pot. Mash with potato masher or beat with mixer on low speed til smooth. Add cheese; beat till combined. Beat in milk till combined. Season with s&p. Transfer to a 2-qt. casserole; cover. Bake at 350 for 25 mins. or till heated through. (or cover and chill up to 24 hrs. To reheat bake, covered in a 350 oven for l-l/2 hrs. or tillheated through
