BOSTON M. MEATLOAF

l cup tomatosauce
l-l/2 tbsps. barbecue sauce
l tbsps. granulated sugar
l-l/2 lbs. ground sirloin (l0% fat)
6 tbsps. flour
3/4 tsp. salt
3/4 tsps. onion powder
l/4 tsp. pepper
l dash garlic powder
Prheat oven 400. Combine tomato sauce, babecue sauce and sugar in small saucepan over med. heat.
Heat mixture until it begins to bubble stirring often then remove from heat. In a large bowl add all but
2 tbsps. of the tomato sauce to the meat. Use a large wooden spoon or your hands to work the sauce
into the meat until well combined. Combine remaining ingredients with the ground sirloin– flour, salt,
onion powder and pepper. Use wooden spoon or hands to work the spices and flour into the meat.
Load the meat into a loaf pan. Wrap foil over the pan and place it into oven for 30 mins. After 30 mins.
take loaf from oven, remove foil and drain the fat. Using a knife slice the meatloaf all the way through
into 8 slices while it is still in the pan. This will help to cook the center of the meatloaf. Pour the
remaining 2 tbsps. of sauce over the top of meatloaf in a stream down the center. Don’t spread the sauce.
Place the meatloaf back into the oven, uncovdered, for 25-30 mins. or until it is done. Allow to cool for
a few mins. before serving.
