BONELESS CHICKEN BREASTS/ORANGE SAUCE

6 whole chicken breasts, boned and cut into halves
6 oz. can frozen orange juice concentrate
l/2 can water
l tablespoon dried tarragon
l tbsps. dried onion flakes

Put juice and water in low wide frying pan. Dissolve juice and add
spices. Place chicken breasts into pan, sprinkle with s&p & spices.
Bring to a very slow simmer, cover & cook about 5-6 mins. Uncover
and turn chicken over. Cover and cook about 5-6 mins. more or just
until tender. Remove chicken to platter, cut into medium slices.
Turn heat to high and reduce sauce to syrupy stage or until
thickened. WATCH PAN CAREFULLY – DO NOT BURN SAUCE. When thickened
pour over chicken and serve.
Can be served either hot or cold.
