4 tbs. butter
l shallot sliced thin
20 ozs. crimini or white mushrooms trimmed and halved
12 ozs. shittake mushrooms, stemmed qnd sliced l/2″ thick
salt& pepper
2 tsps. minced fresh thyme
2 garlic cloves mincedl
l/ 2 cup white wine
Melt 2 tbsps. butter in l2″ skillet over med. heat Add shallot and cook until
softened, l to 2 mins. Add crimini, whittake and l/4 tsp. salt and increase
heat to med high. Cover and cook stirring occasionaly until mushroos have
released their moisture 8 to l0 mins. Remove lid add remaining 2 tbsps. butter
andcook stirring occasionally until mushrooms are deep golden brown and
tender 8 to l0 mins. Stir in thye and garlic and cook until fragrant about 30
seconds. Add wine and cook scrapng up any brown bits until liqud is
nearly evaporated about l min. Season with s&pto taste.
