BARBECUE CHICKEN

Sauce: l cup ketchup
2/3 cup vegetable oil
l cup cider vinegar
4 tbsps. Worcestershire sauce
l cup brown sugar
l tbsps. Dijon mustard
2 tsps. ground ginger
l/4 tsp. garlic powder
Juice of l lemon
3 tbsps. butter
salt & pepper to taste
3 3-lb. chickens, butterflied or cut into pieces
Combine the ingredients for the barbecue sauce in a sauce pan and
bring to a boil, stirring.
Place the chickens in a lare baking dish and pour the sauce over
them. Bake at 450 for l0 mins., than at 250 for 2 to 2-l/2 hours.
Yield: each chicken serves 3 to 4 people.
