BAKED TOMATOES

8 (about 2 lbs.) ripe, round tomatoes, cored & halved
s& P totaste
8 cloves garlic, peeled
3/4 cup freshly ground bread crumbs
Handful fresh, parsley, finely minced
3 tbsps. virgin olive oil

Prehat oven to 400. Arrange tomatoes, cut side up, in a large
baking dish. Season generously with s&p. Slice the garlic into thin
chips & sprinkle over the tomatoes. Combine the bread crumbs and
parsley, and scatter the mixture over tomatoes. Drizzle them with
oil. Bake uncovered for l hour, or until the tomatoes are soft,
browned & sizzling. Serve immediately. (I think l hr. is too long)
Serves 8.
