2 cups summer squash
bacon fat, or vegetable oil, or olive/butter for frying
l/2 large clove garlic, finely chopped
2 tbsps. onion, chopped
l tsp. chopped parsley
l/4 tsp. salt
l/8 tsp. pepper
l large egg, slightly beaten
l/4 cup grated cheese
soft bread crumbs
Wash, slice and cook squash until barely tender, then mash. In
frying pan over low. heat saute garlic, onion & parsley for just a
few minutes to soften. Combine mashed squash with sauteed mixture.
Mix in beaten egg. Pour into a buttered casserole. Cover with bread
crumbs and grated cheese. Bake at 350 for 30 mins. or until squash
is firm in center.
