l med. onion chopped
l green bell pepepr chopped
l cup butter
l cup flour
l lb. crabmeat
4 cups water
l lb. med shrimp peeled and deveined
l/2 lb. bay scallops
l/2lb. flounder filets
3 cups milk
l cup shredded sharp cheddar cheese
l tbsps. white ivnegar
l tsp. worcestershire sauce
l/2 tsp. salt
pinch black pepper
dash hot red pepper sauce
l/2 cup grated Parmesan
Lightlty grease 9xl3 baking dish. In heavy skillet saute onion and pepper in l/2 cup of the butrter. Cook until tender. Stir in l/2 cup of the flour and cook over med heat for l0 mins stirring frequently. Add crabmeat and stir well. Press this mix into bottom of prepared baking dish and set aside. In large dutch oven bring water to boil. Add the shrimp, scallops and flounder. Simmer for 3 mins. Drain and reserve l cup of cooking liquid and set the seafood aside. Heat oven 350. In a heavy saucepan melt the remaining l/2 cup butter over low heat. Stir in remaining l/2 cup flour. Cook and stir constantly for l min. Gradually add the milk plus l cup reserved cooking liquid. Raise heat to med and cook stirring constantly until mixture is thickened and bubbly. Stir in the shredded cheese, vinegar, worcestershire sauce, s&p and hot sauce. Add the cooked seafood and stir gently. Spoon the seafood mixture over the crabmeat crust and sprinkle with Parmsan. Bake in oven for 30 mins. or until lightly browned.

You can also add some fresh mushrooms when sauting the onions and peppers. Also, you can add some thyme for a seasoning.
