BAKED RED POTATOES

2 lbs. small red potatoes
l/4 cup olive oil
2 tsps. dried rosemary or thyme, crumbled
2 tsp. salt
l/2 tsp. pepper

Heat oven 400. Wash & dry taters. With vegetable parer peel a strip
of skin from around the center of each tater. Place taters in large
open roasting pan. Add oil & roll taters to coat. Sprinkle remaining
ingredients over potaters. BAke, turning occasionally for 30-40 mins
or until tender.
Serves 8.
