3 half breasts chicken, skinned and boned
l large onion, chopped
4 stalks celery, sliced
2 tsps. dried parsley
l tsp. dried tarragon
l/2 cup red wine
l/4 tsp. black pepper
l head garlic, spearated, but not peeled
Spray inside of large casserole dish with Pam. In casserole, combine onion, celery, parsley and tarragon. Lay chicken pieces over vegetrables and pour wine over chicken, Distribute unpeeled garlic cloves under and around chicken pieces.
cover casserole tightly. Bake at 325 for l-l/2 hrs. Do not uncover casserole while baking.
