8 tablespoons pesto sauce
2 whole boneless chicken breasts with the skin, halved

Loosen the skin from the chicken breasts, being careful not to
separate it from the breasts and spoon about 2 tbsps. of pesto
evenly under the skin of each breast half. Season with s&p and
transfer to baking dish. Pour l/4 cup water around chicken and
bake it in the middle of preheated 450 oven for l5-20 mins. or until
the skin is golden and the chicken is cooked through.
Can be served with a sauce.
Serves 4.
