Make-Ahead Meatloaf

You”ll need two 8-inch disposable loaf pans. If you”re baking both loaves at once, increase the cooking time in step 4 by 20 minutes and double the glaze.

Makes two 8-inch loaves, each serving 4 to 6

2teaspoons vegetable oil
1onion , chopped fine
3garlic cloves , minced
28Saltine crackers
1 3/4pounds ground beef
1/2pound bratwurst , uncooked, casings removed
1/2cup heavy cream
3large eggs , plus 1 egg yolk, lightly beaten
1tablespoon Dijon mustard
1tablespoon Worcestershire sauce
1/2teaspoon dried thyme
1/3cup finely chopped fresh parsley
1teaspoon Salt
1teaspoon pepper

1/2cup ketchup
2tablespoon brown sugar
1tablespoon cider vinegar
1/4teaspoon hot sauce

1. Heat oil in nonstick skillet over medium heat until shimmering. Add onion and cook until browned, 6 to 8 minutes. Add garlic and cook until fragrant, about 30 seconds. Transfer to large bowl.

2. Process saltines in food processor until finely ground; transfer to bowl with onion mixture. Pulse beef and bratwurst in food processor until just combined. Add meat mixture, cream, eggs and yolk, mustard, Worcestershire, thyme, parsley, salt, and pepper to bowl and knead gently until combined.

3. Press meatloaf mixture into 2 disposable 8-inch loaf pans. Freeze, uncovered, until firm, at least 1 hour. Tightly wrap pans with plastic wrap, placing plastic directly on surface of meat, then with aluminum foil. Freeze for up to 1 month.

4. Adjust oven rack to middle position and heat oven to 350 degrees. Unwrap 1 meatloaf and set in roasting pan. Place roasting pan on rack and pour boiling water into pan until water reaches 1 inch from top of loaf. bake until center of meatloaf registers 150 degrees, 40 to 50 minutes.

5. Meanwhile, whisk all glaze ingredients in saucepan until sugar dissolves. Simmer glaze over medium heat until slightly thickened, about 2 minutes. Cover and keep warm.

6. When meatloaf registers 150 degrees, remove pan from oven. Turn meatloaf out onto foil-covered rimmed baking sheet and brush 2 tablespoons glaze over top and sides of loaf. Adjust oven rack to upper-middle position and heat broiler. Broil until glaze begins to brown and center of loaf registers 160 degrees, 5 to 10 minutes. Transfer to serving platter, tent with foil, and let rest 20 minutes. Slice and serve, passing remaining glaze at table.
