6 slices bvacon, cutr crosswise into julienne strips
2 tbsps. butter
2 tbsps. minced yellow onion
2 pkgs. frozen baby lima beans (l0 oz. each)
2/3 cup water
l tsp. salt
l/4 tsp. pepper
l/2 tsp. paprika
l tbsps. micned fresh parsley
l cup sour cream at room temp.
Brown bacon in large heavy skillet 3-5 mins. until all fat cooks out; drain crisp brown bits on paper towels and reserve. Melt butter in large gheavy saucepan, add onion and saute stirring often aobut 2 mins, until limp. Add beans, water, s&p and paprika; reduce heat. to low, cover and cook stirring occasionally 20-25 mins. until beans are tender; drain well. Remove from heat stir in parsley, sour cream and reserved bacon bits and serve.
