Season chicken with s&p, rub inside and out with two halved garlic cloves, then place them in cavity with onion and l lemon; quartered. Rub outside of chicken with butter. Arrange in buttered roasting pan, surrounded by carrots, apples, turnips and 6 whole cloves of garlic. Squeeze remaining lemon half over apples and veggies. Roast at 325 for 65-75 mins. basting 2 or 3 times until juices run clear. Remove chicken and carrots to warmed platter. Mash degreased pan juices with apples, turnips and garlic for savory puree to be served on the side.

salt & pepper
8 whole galric cloves; peeled
l onion, quartered
l-l/2 lemons
2 tbsps. butter, soft
4 carrots; peeled. chunky
4 baking apples/ peeled, cored cut into 8 slices
4 white turnips; peeled. sliced thin
