ASPARAGUS CREPES

Make crepes as usual.
Filling Heat 3 tbsps. oil in large skioelt over med. heat. Add l med. onion finely chopped; sauyte 5 mins. Reduce heat to low. Add l lb. asparagus, trimmed, cut into l” pieces; simmer l0 mins. Add 3 med. tomatoes, peeled. seeded, chopped and l/3 cup whipping cream. Season with s&-. Coger; simmer until mixture thickens about l0 mins. Cool filling.
Sauce: Melt l/4 stick butter, in med. saucepan over med. heat. Add l/4 cup flour, stir 2 mins (mixture will be very thick. Gradually whisk in 2 cups whole milk. Bring to simmer., whsiking constantly. Cook until slightly thicjened, whisking often about 3 mins. Cool slight.y. Heat oven 350. Butter l3 x9 dish. Arrange creepe and spoon 3 generaous tbsp. filling / Roll crep up place seam side down on dish. Spoon sauce over. Top with l/3 cup grated Parmesan cheese. Bake about 25 mins. until bubbly.
