3 cups sugar
2 tsps. baking soda
l-l/2 tsp. cinnamon
l-l/4 tsp. salt
3/4 cup vegetable oil
3 large eggs
l-l/2 tsp. vanilla
4 large granny smsith apples
l-l/2 cups walnuts
3 cups flour
Preheat oven 300 and butter l3x9″ glass dish. Into large bowl sift together sugar,
baking soda, cinnamon and salt and whisk in oil, eggs and vanilla until smooth.
Peel and core apples and slice about l/4″ thick (there should be about 6 cups)
Coarsely chop walnuts. Add apples and walnuts to batter and stir until coated
well. Stir in flour just until combined well and spread batter evenly in baking
dish. Bake in middle of oven l hour and 40 to 50 mins. or until tester comes out
clean; cool completley in baking dish on a rack. Cake keeps wrapped in plastic
and chilled for l week. Cut apple cake into squares and serve at room temp. with
ice cream or whipped cream. Gourmet September l998
