APPLE STRUDEL CAKE

l cup light brown sugar
l cup chopped apples
l cup sliced almonds, pecans or walnuts
l/4 cup flour
l tsp. ground cinnamon
3 tbsps. butter melted
For the cake:
2 cups flour
l tsp. baking powder
l tsp. baking soda
l stick butter softened
l/2 cup sugar
3 large eggs
l/2 tsp. vanilla ext.
l/3 cup orange juice
For the glaze: l/2 cup confectioners sugar
2-l/2 tsp. orange juice
Heat oven 350. Grease 9 or l0″ tube pan. To prepare strusel in a med. bowl combine brown sugar, apples, nuts, foour and cinnamon. Stir in melted butter.
In med. bowl combine flour, baking powder and soda; mix well. In large bowl using electric mixer set on med. speed beat butter and sugar until light and fluffy. Add eggs, one at a time; beat well after each addition. Add vanilla.
set mixer to low; alternately beat flour mix and orange juice into egg mix. Spoon half of batter into tube pan. Sprinkle with half of strudel. Spoon the remaining butter over the strusel, spreading to make an even layer. Swirl batter with a knife to create a marble pattern. Bake for l5 mins. Remove cake from oven; sprinkle top with remaining struesel. Return cake to oven; bake until toothpick comes out clean, about 30-35 mins.
Combine confec. sugar and orange juice. Mix well. Turn cake out onto a serving plate after it has cooled; invert so struesel is on top, Drizzle glaze over cake; serve. Good idea; substitute chopped pears for the apples; or for a treat try a combination of the two..
