APPLE CAKE A LA PENZEY’S

2 cups flour
2 tsp. baking soda
l/2 tsp. salt
2 tsp. cinnamon
3/4 cup butter softened
l-l/2 cups sugar
2 large eggs
l tsp. vanilla
4 cups finely chopped peeled apples (4-5 apples)
l cup walnuts chopped
Heat oven 350. Grease and flour 9xl3″ glass panand set aside. Sift the flour, baking soda, salt and cinnamon together and set aside. In large mixing bowl, cream butter and sugar together. Add the eggs and vanilla and mix well. Add the flour mix and mixj just until blended. Put in the apples and walnuts and stir until distrisbuted evenly. This batter will be very stiff. Spoon into the baking pan and bake for 40-50 mins or until pick comes out clean.
