AMISH CHICKEN

l cup flour
2 tsps. garlic powder
2 tsps. white pepper
l tbsps. salt
2 tsp. paprika
l/2 cup finely chopped fresh parsley
2 chickens quartered
l-l/2 cups heavy cream
l-l/2 cups water
Heat oven 350. Stir together flour, garlic pwoder, white pepper, salt, paparika and parsley in a large
bowl. Rinse chicken and lightly pat dry. Dredge in flour, knocking off excess and arrange skin sides up
in a l7-l/2 x l2″ roasting pan. Stir togehtrer cream and water and pour over chicken. Bake chicken in middle
of oven l-l/2 hrs. or until skin is golden and crisp. Serves 4 Gourmet Dec. l999
