This old fashioned oil & vinegar slaw is a wonderful do-ahead salad.
Although the dressing is boiling when added to the cabbage, the
chilled slaw is deliciously crisp.
3/4 cup sugar
l large head cabbage, shredded
2 large red onions, thinly sliced
l tsp. celery seeds
l tsp. sugar
l tsp. dry mustard
l-l/2 tsp. salt
l cup cider vinegar
l cup oil
Stir 3/4 cup sugar into cabbage. Place half of cabbage in large bowl
Cover with onion slices. Top with remaining cabbage. Set aside.
Combine celery seeds, l tsp. sugar, mustard, salt & vinegar in sauce
pan. Bring to rolling boil. Add oil, stirring, and return to rolling
boil. Slowly pour boiling dressing over onions and cabbage. Do not
sitr. Cover and refrigerate at once. Chill 24 hours. Stir well
